    Chinese toon has been cultivated as a culinary spice since the Han Dynasty, approximately two thousand years ago. Its tender leaves and young sprouts were incorporated into traditional dishes like scrambled eggs with Chinese toon and tofu preparations. Beyond the kitchen, almost every part of the tree served medicinal purposes in Chinese traditional medicine, treating conditions like enteritis and dysentery. The edible buds, picked in early spring annually, transformed the plant into a celebrated seasonal vegetable. This dual role as both food and medicine shaped its cultural significance across generations of Chinese households.

    How Chinese toon Is Made

    Chinese toon aroma is extracted using Headspace Solid-phase Microextraction (HS-SPME), where 65 micrometer polydimethylsiloxane/divinylbenzene fibers capture volatile compounds at 40 degrees Celsius over 30 minutes. This method isolates the delicate sulfide and terpene profile without solvent residue. The tender spring buds, harvested before unfolding, carry the highest concentration of aromatic compounds. GC-O analysis identifies 26 odor-active compounds, with sulfide compounds comprising 42.1 percent and terpenes comprising 56 percent of the volatile fraction.
